- Freezing: The fruit is quickly frozen at very low temperatures.
- Vacuum Chamber: The frozen fruit is placed in a vacuum chamber where the pressure is lowered, and the temperature is slightly raised. This causes the ice in the fruit to sublimate-meaning it turns directly from solid ice to water vapor, bypassing the liquid phase.
- Drying: The water vapor is removed, leaving the fruit dry, lightweight, and crunchy
